Birch Syrup is a luxury ingredient derived from the sap of a birch tree. It's the woodsy, exotic cousin of maple syrup. While the methods of producing both maple and birch syrups are the same, their flavors are not. Birch syrup tastes sharp at first, with a hint of molasses and brown sugar. It has less sugar than maple syrup, so it pairs nicely with both sweet and savoury dishes.
Birch syrup is used by some of Canada's top chefs. It is a rare and delicious treat with a complex flavor profile, so it can be used in a wide variety of ways. It's an excellent way to bring luxury into your own kitchen. Use it as a glaze for seafood like salmon and scallops, or incorporate it into your favourite barbeque marinade or salad dressing recipes. It's the perfect substitute for balsamic vinegar or molasses, and is delectable on mild cheeses. It also pairs with sweets like ice cream or yogurt, and makes a unique cocktail addition. While maple and birch are very close in consistency and processing, their similarities end there. Their flavour profiles are quite different, so much so that they do not compete, but rather compliment each other. Maple is used as an addition to food which can tolerate extra sweetness such as pancakes, while birch is a culinary syrup. It is most useful to add dimension to dishes and cocktails, with the option to incorporate more sweetness if desired (perhaps some maple syrup!). At Hillside Farm, we are proud to offer both.
